Vegan Peanut Butter Cups!


Because I can only watch so much TV! I've been cooking and baking up a storm. Here's my newest creation - Chocolate Peanut Butter Cups


There's only 4 ingredients and of course being chocolate, it is sure to boost your mood!

INGREDIENTS:

  • 6 tbsp Chocolate Lovers Mix

  • ½ cup melted coconut oil

  • 3 tablespoons maple syrup

  • ½ cup peanut butter or almond butter (I don't think I used a full half cup, I just put a dollop on top of the first layer)


DIRECTIONS:

  • Line a mini muffin tin with liners (make sure you do this! I didn't and they still came out of the tin, but it took a some elbow grease) :)

  • In a bowl, combine the Chocolate Lover Mix, melted coconut oil and maple syrup.

  • Spoon 1 tablespoon of the chocolate mixture into the muffin cups (Makes about 8) and freeze for 10 minutes. 

  • Add a spoonful of the peanut butter or almond butter to the center of each cup, then spoon the remaining chocolate mixture over the top.

  • Freeze for 1 hour before serving.

SUPER TIP: If the second scoop of chocolate doesn't fully cover the peanut butter, you can take a spoon to push it down a little and it should cover it then!
